Avocado Cucumber Shrimp Appetizer

Prep time 10 minutes, cooking time 5 minutes, serves 

 Avocado Cucumber Shrimp appetizer is a perfect bite size appetizer for parties. It is easy and healthy keto friendly treat  for whole family and friends .

Ingredients

  • 1 lb large shrimp, peeled and deveined, tail removed
  • 2 Tbsp olive oil divided
  • 2 garlic cloves, minced
  • 2 tsp paprika
  • 1/4 to 1/2 tsp cayenne pepper*
  • 1/4 tsp salt
  • 1 large avocado
  • 1/4 tsp salt
  • 1 Tbsp lemon juice juice
  • 1 English cucumber, cut into 20 slices
  • 1 tsp green onion, minced

Instructions

  1. Place shrimp in a medium bowl; drizzle with the olive oil and gently toss to coat. Add the garlic and sprinkle seasonings (paprika cayenne  pepper) over shrimp; gently toss to coat.
  2. Heat a nonstick skillet over medium-high heat. Once hot, add the shrimp and cook for 5 minutes or until pink and cooked through. Turn off heat and set aside.

3.In a medium bowl, mash the avocado with the backside of a fork until few small lumps remain. Add the salt and lemon juice; mix well.

4.Place a small amount of mashed avocado on each cucumber slice ( I piped with pipping bag)  . Place shrimp on the top of  avocado. Garnish with green onion.

         5. Serve immediately.
