Baked Chicken with Roasted Vegetables

Perfectly baked chicken breasts that are juicy, tender, easy, and oh so flavorful! All you need is a drizzle of olive oil, a special seasoning mix. good for keto and high protein diet. You can serve them with vegetables, potatoes, rice


  • 5 large chicken breasts 
  • 1 1/2 teaspoons paprika
  • 1 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/2 cayenne pepper
  • 1/4 teaspoon cracked black pepper
  • tablespoon olive oil
  • 3 Chinese eggplants
  • 3 zucchinis
  • 1 orange
  • 0.5 lb small sweet peppers


  1. Preheat the oven to 425 degrees F
  2. Place the chicken in the baking pan ( I used 9 by 13 baking pan). and a light drizzle gently coats the chicken to help the seasoning stick, and keeps it nice and moist.

3.Add the spices and herbs to a bowl and mix them until combined. Give each chicken breast a generous rub of the spice blend. Make sure to do this on both sides. slice the orange and place around the chicken

4.Bake chicken in preheated oven for 25  minutes, or until internal temperature is 165°F (75°C) using a meat thermometer. It should be golden with crisp edges.*

5.Remove pan from oven, transfer chicken to serving plates and let rest for 5 minutes before serving.

6.To serve, drizzle pan juices over the chicken and garnish with freshly chopped parsley.

7.Cut the vegetables in bite size, and place on the baking sheet covered with parchment paper.

8. Drizzle vegetables with olive oil, sprinkle with salt and pepper.

9. Bake at 400F/200C for 20 minutes ,or until the are tender tender.

10. Take out of oven and serve with chicken.
