Mushrooms with brie and goat cheese

These Mushrooms with Brie and Goat cheese fantastic recipe that combines the tangy nuttiness of brie cheese, creamy goat cheese with the savory goodness of mushrooms, topped off with a touch of sweetness from pomegranate arils, thyme  and   are the perfect appetizer or side dish for any occasion. Plus, they’re easy to make and only require a few simple ingredients.

Ingredients

  • 16 Baby Bella Mushrooms
  • 1 small wedge Brie cheese
  • 2 oz goat cheeseT1/2 cup pomegranate arils
  • Thyme
  • Kosher salt and freshly cracked black pepper
  • 2 table spoon olive oil
  • Balsamic vinegar

Instructions

  1. Pre-heat your oven to 350 degrees.
  2. Clean the mushrooms and remove the stem. Place them bottom side up on a baking dish.
  3. In a small bowl, combine  2 tablespoons of olive oil and season the mixture with salt and pepper. Put about 1 tablespoon of brie into 8  of the mushroom cavities. Leave 6 without
  4. Transfer the baking dish to the oven and bake for about 10-15 minutes until the mushrooms are tender and then cheese is melted.
  5. Take out mushrooms out of oven . Put 1 tsp goat cheese in the rest of 8 mushrooms.
  6. Garnish with  arils and thyme.  drizzle with balsamic vinegar
