Air fryer eggplant

prep time 5 minutes, cooking time 18 minutes

Air fryer eggplant is a simple side dish recipe everyone can enjoy because it is naturally gluten-free, vegan, paleo, low in carbs, and it goes well with almost any main course.


  • 2 medium size eggplants , sliced
  • 2 cloves of garlic
  • 2 tbsp  cilantro, minced
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2tbsp red vine vinegar
  • 1/2 red bell pepper , cubed
  • 2 tbsp olive oil


  1. Place sliced eggplants in the bowl.  Sprinkle with salt ad let it stay for 5 minutes for some moisture and  bitter juices to come out.

2.Tab the eggplant slices dry with paper towel.

3.Place the  eggplant slices in the air fryer basket in a single layer, spray with olive oil and cook to 400º F for 16 minutes . Add  shake setting, so you can flip to another side until the eggplant is soft and golden brown. This recipe will make a few batches depending on the size of your air fryer basket.

4.Place cooked eggplants on the serving plate, sprinkle with black pepper, minced cilantro, garlic, red bell pepper.  Spray with red vine vinegar and serve
