Sausage, mushrooms, and peppers with pasta

When I am short on time Sausage Pasta with Vegetables is one of my go-to recipes  . This recipe is so easy to make under 30 minutes and it’s a family friendly lunch or dinner that everyone at home will love!


  • 1.5  lbs Beef smoked sausage , sliced into 1/2 inch pieces
  • 8 ounces mushrooms, sliced
  • 1 jar pasta sauce of choice
  • 8 oz grape tomatoes
  • 6 oz baby sweet peppers
  • 12 ounces rotini pasta, cooked and drained, or spiral
  • 2 tbsp. olive oil
  • 1/2 tsp oregano
  • salt and pepper by taste
  • Pasta sauce


  1. Boil the water in the pot, add salt , pasta  and cook according of  the instructions on the box. Drain.


2. Heat a large non-stick skillet to medium high and place sausage links on the hot skillet. brown sausage until golden brown and crispy, about 5 to 7 minutes.  Remove sausage from skillet and cut into 1/2-inch-thick slices. Transfer sausage to a bowl and set aside until ready to use.

3. Add mushrooms and peppers to the skillet with the sausage fat (if necessary, add oil to the skillet). Cook mushrooms and peppers over medium-high heat, stirring occasionally, 5 minutes or until tender.

4.Return sausage to skillet with the mushrooms. add salt and pepper , oregano and simmer covered, stirring occasionally, 5 minutes


  1. Combine with cooked pasta and serve.
