Keto pancakes

prep time 10 minutes,  cooking time 15 minutes, makes 6 pancakes

These Keto pancakes are perfectly light and fluffy, plus  easy to make and  mess free. Enjoy them topped with  your favorite sugar-free syrup and berries of your choice for the perfect breakfast. They are sugar free, low carb and gluten free , and  diabetic friendly pancakes.



  • 1 cup almond flour
  • 2 eggs, room temperature
  • 1/3 cup almond milk
  • 2 tbsp monk fruit erythritol powder
  • 1/2 tsp baking powder
  • 2 tbsp  olive oil or coconut oil
  • Sugar free syrup
  • Berries to garnish(optional)


  1. In the bowl whisk eggs, coconut oil, sugar substitute,  pinch of salt.
  2. Add sifted almond flour and baking powder to the egg mixture and fold in gently.
  3. Heat the skillet to medium heat , spray with oil . Spoon the batter into skillet , cover it and let it cook for 2-3  minutes.  Flip them and let them cook for another minute.
  4. Serve them with powder sugar substitute,  or sugar free syrup and berries of your choice.
