Oatmeal Banana Bread with Chocolate Chips

If you have over ripe bananas and don’t know what to do with them, bake this Oatmeal Banana Bread recipe. This super moist and loaded banana bread is like an oatmeal chocolate chip cookie and banana bread all rolled into one! The perfect dessert for breakfast or as snack! 

Ingredients

  • 4 ripe bananas, mashed
  • 4 eggs
  • 1 stick butter (110 g)
  • 3 cups old fashioned oats
  • 1 cup chocolate chips
  • 1/2 cup Greek yogurt
  • 1/2 cup honey
  • 1/2 cup oat flour
  • 1 tbsp baking powder
  • 1 tsp cinnamon

Instructions

  1. Preheat the oven to 350°F/180°C.
  2. In the meantime, whisk the eggs in a mixing bowl. Add the mashed bananas, melted butter, Greek yogurt, and honey. Mix well.
  3. In a separate bowl, combine the old fashion oats, oat flour, baking powder, and cinnamon together. Add this mixture into the mixing bowl. Now add the  chocolate chips and mix everything into a batter.
  4. Place parchment paper into a loaf pan. Transfer the batter into pan, and place in the preheated oven to bake for 40 minutes. Poke the oatmeal banana bread with a toothpick to confirm the batter is fully baked.
  5. Let it cool and serve.
