Oven Roasted Chicken and Mashed Potatoes is a great dish for dinner or for large family gatherings. Chicken and mashed potatoes are very simple and bland foods, but with the right ingredients you can spice this otherwise bland combination to be delicious. Both a great source of protein and complex carbohydrates, it will be sure to fill you up at the end of a long day.
Ingredients
- 2 lbs chicken breast
- 2 lbs Idaho potatoes
- 3 tbsp olive oil
- 2 tbsp butter
- 1 tbsp sweet paprika
- 1.5 tsp salt
- 1/2 tsp white pepper
- 1/3 tsp garlic powder
- 1/2 cup half-and-half
Instructions
- Preheat the oven to 400°F/180°C.
- Wash and dry the pieces of chicken breast.
- Whisk the olive oil, sweet paprika, 1/2 tsp of salt, 1/2 tsp of white pepper, and garlic powder together in a bowl. Rub this sauce on the chicken breast.
- Wrap each piece of chicken breast in aluminum foil and place them on a baking pan. Slide the baking pan in the preheated oven and bake for 35 minutes.
- Boil a large pot of water with 1 tsp of salt thrown in. While the water is heating up and the chicken is baking, peel the Idaho potatoes. Chop them into 1 inch cubes and once the water is at a boil, lower the heat and put the chopped potatoes in for 25 minutes, or until they are tender.
- Drain the water out of the pot. Add the butter, half-and-half, and your preferred amount of salt and white pepper. Mash everything until it is smooth.
- Once the chicken is ready, take the baking pan out of the oven. Set it aside for 10 minutes to rest.
- Remove the aluminum foil from the chicken and serve the oven roasted chicken with mashed potatoes.
