Banana Oatmeal Cake is a moist cake made out of bananas, oats, walnuts, cranberries, and raisins. The bananas, cranberries, and raisins give the cake a wonderfully sweet taste, while the oats and walnuts add a rich texture that makes it a joy to eat. An extremely delicious treat appropriate as a dessert or for breakfast.
Ingredients
- 2.5 cups oatmeal
- 3 eggs
- 3 ripe bananas, mashed
- 1/2 cup brown sugar
- 1/2 cup vegetable oil or butter
- 1/2 cup sour cream
- 1/2 cup walnuts, chopped
- 1/2 cup dry cranberries
- 1/2 cup raisins
- 3 tbsp flour
- 1 tsp baking powder
- 1 tsp vanilla
- 1 tsp powdered sugar
Instructions
- Preheat the oven to 350°F or 180°C.
- In a big bowl whisk the eggs with brown sugar. Add mashed bananas, sour cream, vegetable oil, and vanilla. Mix well.
- Add 2.5 cups of oatmeal and mix. Set it aside for 10 minutes.
- Meanwhile, add the chopped walnuts, dry cranberries, flour, and baking powder into a separate bowl. Mix well and pour it into the bowl with the oats. Mix again into a batter.
- Either lay out parchment paper or use baking spray on a loaf pan. Add the batter to the pan.
- Place the pan into the preheated oven and bake for 45 minutes. Poke a toothpick into the cake. If it comes out with no batter on it, it is ready.
- Take the cake out of the oven and let it cool. Sprinkle with powdered sugar and serve.
