Banana Oatmeal Cake is a moist cake made out of bananas, oats, walnuts, cranberries, and raisins. The bananas, cranberries, and raisins give the cake a wonderfully sweet taste, while the oats and walnuts add a rich texture that makes it a joy to eat. An extremely delicious treat appropriate as a dessert or for breakfast.

Ingredients

  • 2.5 cups oatmeal
  • 3 eggs
  • 3 ripe bananas, mashed
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil or butter
  • 1/2 cup sour cream
  • 1/2 cup walnuts, chopped
  • 1/2 cup dry cranberries
  • 1/2 cup raisins
  • 3 tbsp flour
  • 1 tsp baking powder
  • 1 tsp vanilla
  • 1 tsp powdered sugar

Instructions

  1. Preheat the oven to 350°F or 180°C.
  2. In a big bowl whisk the eggs with brown sugar. Add mashed bananas, sour cream, vegetable oil, and vanilla. Mix well.
  3. Add 2.5 cups of oatmeal and mix. Set it aside for 10 minutes.
  4. Meanwhile, add the chopped walnuts, dry cranberries, flour, and baking powder into a separate bowl. Mix well and pour it into the bowl with the oats. Mix again into a batter.
  5. Either lay out parchment paper or use baking spray on a loaf pan. Add the batter to the pan.
  6. Place the pan into the preheated oven and bake for 45 minutes. Poke a toothpick into the cake. If it comes out with no batter on it, it is ready.
  7. Take the cake out of the oven and let it cool. Sprinkle with powdered sugar and serve.
