Raspberry Oatmeal Cake is a moist cake made out of bananas, raspberries, honey. The bananas, honey , raspberry give the cake a wonderfully sweet taste, while the oats add a rich texture that makes it a joy to eat. An extremely delicious treat appropriate as a dessert or breakfast.
Ingredients
- 3.5 cups old-fashioned oats
- 4 eggs
- 1 cup raspberries
- 3 ripe bananas, mashed
- 1/2 cup honey
- 1/2 cup vegetable oil or butter
- 1/2 cup sour cream
- 2 tbsp flour
- 1 tsp baking powder
- 1 tsp vanilla
- 1 tsp powdered sugar
Instructions
- Preheat the oven to 350°F or 180°C.
- In a big bowl whisk the eggs with honey. Add mashed bananas, sour cream, vegetable oil, and vanilla. Mix well.
- Add 3.5 cups of oatmeal and mix. Set it aside for 10 minutes.
- Meanwhile, mix flour and baking powder in a separate bowl, add into the bowl with the oats. Mix again into a batter mixed well. Add fresh raspberries.
- Either lay out parchment paper or use baking spray on 9 by 5 inch loaf pan. Add the batter into the pan.
- Place the pan into the preheated oven and bake for 30-45 minutes. Poke a toothpick into the cake, if it comes out with no batter on it, it is ready.
- Take the cake out of the oven and let it cool. Sprinkle with powdered sugar, garnish with fresh raspberries and serve.
