Low-Carb Sautéed Zucchini with Mushroom

prep time 10 minutes, cooking time 15 minutes

 

This Low carb Sauteed Zucchini and Mushroom recipe  is one of my favorite easy, keto friendly side dish recipes. All you need is a few ingredients and 30 minutes for making this delicious dish.

Ingredients:

  • 2 large zucchinis, sliced
  • 2 cups mushrooms, sliced
  • 2 small red peppers,
  • sliced
  • 2 small yellow bell peppers
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)
  • 3 tbsp soy sauce
  • 2 tbsp red vine vinegar

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Sautee the mushrooms until golden, same the zucchinis

3. Transfer sauteed vegetables into bowl. Add red  and yellow bell peppers

4. In small bowl mix soy sauce, vinegar, salt, pepper, minced garlic. Pour the dressing over vegetables and mix

5.Garnish with fresh cilantro before serving.
