Borek is a savory pastry that has roots in Ottoman cuisine and is often made with a spinach and feta cheese filling. Very similar to spanakopita from Greece, the filling is commonly wrapped in a flaky and buttery phyllo dough and topped with sesame seeds. Vegetarian friendly and delicious, borek makes for the perfect party appetizer, or alternatively can be served as a light dinner.
Ingredients
- 1 package phyllo dough (15 sheets)
- 2 bunches spinach, chopped
- 200 g feta cheese
- 100 g cottage cheese
- 2 eggs
- 1/2 cup 2% milk
- 1/2 cup sesame seeds
- 1/3 cup vegetable oil
Instructions
- Preheat the oven to 400°F or 200°C.
- Meanwhile, add the chopped spinach, cottage cheese, and crumbled feta cheese into a large bowl. Mix well.
- In a separate bowl, mix the vegetable oil, eggs, and milk
- Place 2 sheets of the phyllo dough flat on top of each other. Brush these sheets with the egg mixture. Add another sheet on top and brush again.
- Place about 1/5 of the spinach mixture on one end of the sheet and roll tightly. Cut the roll into 3 pieces.
- Repeat steps 4 and 5 for the rest of the phyllo dough. Lay parchment paper on a baking pan and the rolls on top of the parchment paper. Brush the pieces with the egg mixture one more time. Sprinkle the rolls with sesame seeds. Place the pan in the oven for 20 minutes, or until golden brown.
- Let it cool and serve.
