Oven Roasted eggplant

Prep time 10 minutes,  cooking time 20 minutes

Looking for a quick side dish for dinner? This  Oven-Roasted eggplant is healthy, gluten-free, and cooks in no time.

Ingredients 

  • 3 medium size eggplants
  • 2 red bell peppers
  • 2 cloves of garlic, minced
  • 1/2 cup cilantro,  chopped
  • 1/3 cup olive oil
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2tsp salt
  • 3 tbsp red vine vinegar

Instructions

  1. Preheat the oven to 400°F/200°C
  2. Wash and peel the eggplants.

3.Cut eggplant longwise up to the stem.

4.Sprinkle both sides of eggplant slices with kosher salt and arrange on a large tray lined with paper towels. Leave for 30 minutes to allow the eggplant to “sweat.”

5.Pat the eggplant slices dry and brush both sides generously with mix of extra virgin olive oil , garlic powder, paprika. place eggplants and red bell peppers on the baking sheet covered with parchment paper

6. Roast in heated oven for 20 minutes, turn over using a spatula and roast for another 10 to 15 minutes or until the eggplant turns golden brown. Peal cooled red peppers and slice them.

7. Serve eggplants, peppers on the platter, sprinkle with cilantro, garlic ,and drizzle with red vine vinegar

10.Serve this roasted eggplant as a side or as an appetizer, it’s great on top of warm pita or your favorite crusty bread.
