Potato Pancakes are a traditional recipe that makes for wonderful comfort food. We recommend serving the pancakes with applesauce or sour cream for a light dinner. Alternatively you can serve them with roasted chicken for a hearty winter meal. Enjoy!
Ingredients
- 4 large Idaho potatoes
- 1 /2 bunch green onion, minced
- 4 egg, beaten
- 1 cup vegetable oil
- 2 tbsp all-purpose flour
- 1 tsp salt
- black pepper to taste
Instructions
- Peel and finely grate the large potatoes. Now place them on a kitchen towel and squeeze any excess liquid out. Add the grated potatoes along with the minced green onions to a bowl.
- Mix in the beaten eggs, all-purpose flour, salt, and your preferred amount of black pepper. Mix well into a batter. If the batter is not a thick consistency, add 1-2 tbsp of flour.
- Pour about 1 cup of vegetable oil into a heavy skillet over medium high heat. The oil should be a 1/4 inch high. Drop two or three 1/4 cup mounds of batter into the hot oil and flatten it to make 1/2 inch thick pancakes. Fry for 4 minutes per a side, or until golden brown.
- Transfer the pancakes to a paper towel lined plate to drain any excess oil. Repeat until all of the batter is used.
- Serve.
