Beetroot Dip with Walnuts

This Beet Dip is a beautiful purple dip made with only good things, like garlic, walnuts  , and perfect paired with veggies or crackers.

This quick and easy  beet dip is healthy and looks beautiful on the table, which makes it perfect to serve at holidays, parties and family get togethers.
 

Ingredients

  • 4 cooked beetroots
  • 3 garlic cloves, minced
  • 1/2 cup chopped walnuts
  •  2 tbsp mayonnaise
  • 1/3 tsp salt1/4 tsp pepper

 

Instructions

1. Place beets in a large pot and pour in water to cover by at least 2″; season with salt. Bring to a boil, then reduce heat and simmer until tender (a paring knife should easily slip through flesh), 45–60 minutes. Transfer to a bowl of ice water and let cool. Peel off skin and grate the beets. place into the bowl 

2. Add minced garlic, walnuts, mayonnaise,  salt to the same bowl, and mix well.
3. Serve with crackers,  or toasted banquet  slices.
