Cucumber rolls with crab meat filling

Prep time 2o minutes, cooking time 10 minutes, serves 8 people

These cucumber  rolls are lighter, low-carb without rice, but still hit that seafood flavor with creamy crab mixture. Fresh Cucumber rolls are perfect for a party table for your family and quests 


  • 2 English cucumbers
  • 3 hard boiled eggs
  • 10 oz  imitation crabs
  • 2 tbsp mayonnaise
  • 1 clove of garlic
  • 1/3 tsp salt and pepper
  • dill to garnish


  1. With a vegetable peeler or metal cheese slicer, cut 12 very thin slices down the length of the cucumber; pat dry.

2.In food processor add crab meat, hard boiled eggs, clove of garlic, and mince them into small pieces. Add 2 tbsp of mayonnaise , salt, pepper ,and mix well

3.Take 1 strip of cucumber place 1 tbsp of crab mixture on the end of strip and roll it up into the roll.
