Ever wanted to make cookies as good as grandma’s? Well you can with this simple oatmeal cookie recipe. The combination of walnuts and cranberries make for a crunchy and sweet cookie, while the healthy oats will keep the guilt at bay. Happy eating!
Ingredients
- 1 cup cranberries
- 1 cup walnuts, chopped
- 1 1/2 cups flour
- 2 1/2 cup old fashion oatmeal
- 2 eggs
- 1 stick of butter
- 1 teaspoon baking soda
- 1 teaspoon vanilla
- 3/4 cup brown sugar
Instructions
- Leave stick of butter out to soften. Whisk 2 eggs with 3/4 cup of brown sugar in a large bowl. Add softened butter; mix again. Add 1 1/2 cups of flour and 1 teaspoon of baking soda; mixing again. Add 1 cup of cranberries, 1 cup of chopped walnuts, 2 1/2 cups of oatmeal, and mix one last time into a consistent dough.
- Preheat the oven 350°F or 180°C. Meanwhile, place a sheet of parchment paper over a baking pan. Use a spoon or ice cream spoon to place the cookie dough on the paper to your preferred size.
- Once oven is done preheating, bake the cookies for 8-10 minutes, or until the cookie turn a golden color. The inside of the cookies should still be soft.
